La Fili\u00e8re, the forest edibles development arm of the Syndicat des producteurs de bois de la Mauricie (SPBM), and Truffes Qu\u00e9bec launched the first regional partnership for truffle cultivation development in Qu\u00e9bec in 2020.

This partnership aims to inform, advise, and support forest landowners and agricultural producers in establishing truffle orchards. Field operations are conducted under the supervision of J\u00e9r\u00f4me Quirion, a truffle cultivation expert.<\/p>\n\n

Two truffle enthusiasts, J\u00e9r\u00f4me Quirion of Truffes Qu\u00e9bec and Dr. V\u00e9ronique Cloutier, play a crucial role in the dynamic and promising development of truffle cultivation in Mauricie and across Qu\u00e9bec. Thanks to their complementary expertise, they are helping to better understand and showcase Qu\u00e9bec-grown truffles.

Until recently, the commercial potential of Qu\u00e9bec\u2019s native truffles remained largely unknown. The main reason is that truffles in Qu\u00e9bec were being sought using the same methods as those used for Mediterranean truffles in Europe \u2014 even though they are different and require specific search techniques.<\/p><\/div>\n\n

What is a truffle?<\/strong><\/strong><\/h3>\n\n

A truffle is the fruiting body of an underground fungus. This fruiting structure consists of a flesh (gleba) and a skin (peridium), which can be either smooth or warty. The truffle develops from a mycelium that lives in symbiosis with the roots of trees and has antibiotic properties that benefit the surrounding vegetation.<\/p>\n\n

This symbiosis occurs through mycorrhizae, and when this association results from deliberate inoculation, it is referred to as controlled mycorrhization.<\/p><\/div><\/div>\n\n

In 2009, a meeting between J\u00e9r\u00f4me Quirion and James Trappe of Oregon State University \u2014 a pioneer of truffle cultivation in North America \u2014 inspired J\u00e9r\u00f4me to develop truffle farming in Qu\u00e9bec.

He enlisted the help of renowned truffle hunter and expert Francesca Marzitelli to locate the native truffle specimens needed for the production of his truffle-inoculated trees.

Today, J\u00e9r\u00f4me Quirion and his team at Truffes Qu\u00e9bec are working to establish cultivation of Appalachian truffles (Tuber canaliculatum<\/em>), along with other species such as the Burgundy truffle (Tuber uncinatum<\/em>) and the Bianchetto truffle (Tuber borchii<\/em>)<\/p><\/div>\n\n

    Dr. V\u00e9ronique Cloutier\u2019s insatiable desire to uncover the presence of wild truffles in Qu\u00e9bec\u2019s northern forests led her to discover that forest mammals know how to find them. They detect truffles by scent, consume them, and then disperse the intact spores through their feces. In 2017, using genomic analysis (DNA study), Dr. Cloutier confirmed the presence of truffles of interest in Qu\u00e9bec. Here are the main species of truffles discovered\u2014some of which are already being studied for their potential to be cultivated in open fields:<\/p><\/div><\/div>\n\n

    Appalachian Truffle<\/strong> (Tuber caniculatum<\/em>)<\/strong><\/p>\n\n

    Oregon Black Truffle<\/strong>(Leucangium carthusianum<\/em>)<\/strong><\/p>\n\n

    Research has shown that this truffle is present in Qu\u00e9bec. It has high culinary and commercial value. Although its growing environment is still not well understood, its commercial potential makes it a research priority.<\/p><\/div><\/div><\/div><\/div>

    Lilac Truffle<\/strong> (Tuber rufum<\/em><\/em>)<\/strong><\/p>\n\n

    The Lilac Truffle was discovered on the campus of the Universit\u00e9 du Qu\u00e9bec \u00e0 Trois-Rivi\u00e8res, which is one of only two known locations in Qu\u00e9bec where this species has been identified.<\/p><\/div>\n\n

    Pecan Truffle<\/strong> (Tuber lyonii<\/em>)<\/strong><\/p>\n\n

    The Pecan Truffle<\/strong> (Tuber lyonii<\/em>) was first reported by chance<\/strong> by growers raking the soil beneath their pecan orchards in Georgia<\/strong>. Beneath its thin yellowish-brown skin lies a marbled flesh with white veins<\/strong>, exuding a nutty, earthy aroma<\/strong> that is highly prized in cooking.<\/p>\n\n

    Discovered in Qu\u00e9bec.<\/strong> Although native to the southeastern United States, this species has extended its known range into the province of Qu\u00e9bec, where confirmed harvests show its ability to fruit in the cooler climates of northeastern North America.<\/p><\/div><\/div>

    The Pich\u00e9 Truffle<\/strong> (Tuber pichei<\/em>)<\/strong><\/p>\n\n

    Thanks to the research of Dr. Cloutier, La Fili\u00e8re Mauricie is the first organization to announce the discovery of this unique truffle in Qu\u00e9bec. Named in honor of Dr. Yves Pich\u00e9, this truffle appears to reach maturity very late in the fall, after the first snow has fallen. Further research is needed to learn more about this one-of-a-kind gem.<\/p><\/div>\n\n

    The Pacific Truffle<\/strong> (Tuber pacificum<\/em>)<\/strong><\/p>\n\n

    Never photographed, this truffle is among the rarest in the world. The few specimens found on the Pacific Coast share the exact same DNA sequence as the spore samples found in mammal droppings in Qu\u00e9bec. Even if we were to confirm that this truffle is native to Qu\u00e9bec, we still wouldn\u2019t be able to rename it, even if the West Coast strain originally came from an introduction.<\/p><\/div><\/div>
