C\u2019est une des raisons pour lesquelles on a cr\u00e9\u00e9 le genre Hypsizigus. Les shimejis vivent \u00e0 l\u2019int\u00e9rieur d\u2019arbres vivants *<span class=\"champ-numero\">1*<\/span> *<span class=\"champ-numero\">2*<\/span>, tandis que les pleurotes d\u00e9composent le bois d\u2019arbres morts. Ce champignon fructifie en octobre principalement sur les troncs de l\u2019\u00e9rable \u00e0 Gigu\u00e8re, mais \u00e9galement sur les fr\u00eanes et sur une grande vari\u00e9t\u00e9 de feuillus \u00e0 bois dur. Apr\u00e8s la chute des feuilles, en circulant sur les routes et autoroutes, on peut voir leurs fructifications dans les arbres.<\/p>\n<p>Le champignon s\u2019introduit par une blessure de l\u2019arbre *<span class=\"champ-numero\">3*<\/span> *<span class=\"champ-numero\">4*<\/span> et se d\u00e9veloppe dans la partie morte du bois \u00e0 l\u2019int\u00e9rieur du tronc. Chaque ann\u00e9e, un nouvel anneau de bois s\u2019ajoute sous l\u2019\u00e9corce. \u00c0 l\u2019int\u00e9rieur du tronc, un nouvel anneau de bois meurt donnant au champignon un anneau suppl\u00e9mentaire de bois \u00e0 d\u00e9composer. Ainsi, le champignon peut vivre tr\u00e8s longtemps et ce sont les shimejis qui nous donnent des arbres creux, des arbres \u00e0 hiboux.<\/p>\n<p>Les fructifications sont g\u00e9n\u00e9ralement isol\u00e9es ou par groupes de deux \u00e0 cinq *<span class=\"champ-numero\">2*<\/span> *<span class=\"champ-numero\">3*<\/span> *<span class=\"champ-numero\">4*<\/span>, rarement plus *<span class=\"champ-numero\">5*<\/span>, pr\u00e8s du sol ou en hauteur. Une de leurs caract\u00e9ristiques est que le dessus du chapeau est tr\u00e8s souvent craquel\u00e9 *<span class=\"champ-numero\">6*<\/span>.<\/p>\n<p>La chair de ce champignon est \u00e9paisse et ferme *<span class=\"champ-numero\">7*<\/span> *<span class=\"champ-numero\">8*<\/span>, d\u2019une excellente qualit\u00e9 et rarement parasit\u00e9e par les insectes; parfois les \u00e9cureuils s\u2019y int\u00e9ressent. Ses principaux ennemis sont le soleil et le vent qui dess\u00e8chent leur bordure provoquant une perte d\u2019apparence et de qualit\u00e9. Les fructifications fatigu\u00e9es dont la chair se ramollit *<span class=\"champ-numero\">9* <\/span>doivent rester sur les arbres.
