Pour le march\u00e9 nord-am\u00e9ricain, on effectue le classement selon trois cat\u00e9gories: boutons, fructifications enti\u00e8res (chapeau ouvert) et chapeaux. Le matsutak\u00e9 de l\u2019est du Canada est diff\u00e9rent du matsutake cueilli sur la C\u00f4te-Ouest et se rapproche beaucoup du <em>Tricholoma matsutake<\/em> cueilli au Japon.<\/p>\n<p>Les primordiums du matsutake se forment profond\u00e9ment dans le sol sous l\u2019horizon gris *<span class=\"champ-numero\">3*<\/span> *<span class=\"champ-numero\">6*<\/span>, ce qui leur permet de bien r\u00e9sister aux p\u00e9riodes de s\u00e9cheresse et de chaleur. En se d\u00e9veloppant, les jeunes boutons soul\u00e8vent le sol et traversent les mousses et les lichens *<span class=\"champ-numero\">1*<\/span> *<span class=\"champ-numero\">2*<\/span> *<span class=\"champ-numero\">3*<\/span> pour venir \u00e9taler leurs chapeaux en surface. Parfois, il demeure pris sous des racines; il se d\u00e9forme ou se brise avant d\u2019atteindre la surface.<\/p>\n<p>La cueillette s\u2019effectue de la fin d\u2019aout jusqu\u2019aux neiges. Tr\u00e8s souvent, \u00e0 l\u2019\u00e9tape bouton *<span class=\"champ-numero\">4*<\/span> *<span class=\"champ-numero\">5*<\/span>, les fructifications ne sont pas visibles sous les lichens ou la mousse des sous-bois. Ce sont les fructifications voisines plus d\u00e9velopp\u00e9es *<span class=\"champ-numero\">8*<\/span> qui en signalent la pr\u00e9sence. Il faut les extraire du sol en \u00e9vitant de briser ou de faire \u00e9clater le pied. Pour le march\u00e9 du Japon, les pieds ne sont jamais coup\u00e9s *<span class=\"champ-numero\">9*<\/span>.<\/p>\n<p>En for\u00eat bor\u00e9ale, on trouve le matsutake dans les peuplements de pins gris de plus de 60 ans. On le trouve occasionnellement dans le sud du Qu\u00e9bec, toujours associ\u00e9 aux pins et moins fr\u00e9quemment \u00e0 la pruche.
