De par sa taille et sa couleur *<span class=\"champ-numero\">6* *<\/span><span class=\"champ-numero\">7*<\/span>, cette chanterelle signale rapidement sa pr\u00e9sence sur les parterres forestiers o\u00f9 elle fructifie en compagnie d\u2019arbres r\u00e9sineux et d\u2019arbres feuillus. Son gout acidul\u00e9 plus prononc\u00e9 que celui de la chanterelle commune, ainsi que son parfum bien marqu\u00e9 font en sorte qu\u2019elle a sa place sur nos tables.<\/p>\n<p>On reconnait cette chanterelle \u00e0 sa grande taille, \u00e0 sa forme en entonnoir profond *<span class=\"champ-numero\">5* *<\/span><span class=\"champ-numero\">6*<\/span> qui accumule l\u2019eau de pluie, et \u00e0 la couleur orang\u00e9e de sa paroi interne *<span class=\"champ-numero\">5*<\/span> *<span class=\"champ-numero\">7*<\/span>. Comme tous les champignons de ce groupe, ce sont des plis dans la chair qui ornent la paroi ext\u00e9rieure du pied *<span class=\"champ-numero\">4*<\/span> *<span class=\"champ-numero\">6*<\/span>.<\/p>\n<p>\u00c0 l\u2019\u00e9tape bouton *<span class=\"champ-numero\">3*<\/span>, les jeunes chanterelles sont de forme cylindrique; \u00e0 mesure qu\u2019elles se d\u00e9veloppent, elles prennent la forme d\u2019un entonnoir *<span class=\"champ-numero\">4*<\/span>, typique \u00e0 l\u2019esp\u00e8ce. Les parois de sa chair sont relativement \u00e9paisses *<span class=\"champ-numero\">5*<\/span> et, cueillies jeunes, ces chanterelles ne pr\u00e9sentent pas de probl\u00e8mes de conservation en chambre r\u00e9frig\u00e9r\u00e9e.<\/p>\n<p>L\u2019eau qui s\u2019accumule au fond de l\u2019entonnoir acc\u00e9l\u00e8re la d\u00e9t\u00e9rioration de la partie interne de la base; on enl\u00e8ve souvent cette partie d\u00e9t\u00e9rior\u00e9e avant la cuisson. Lorsque des taches fonc\u00e9es apparaissent sur la paroi ext\u00e9rieure *<span class=\"champ-numero\">8*<\/span> et que la paroi int\u00e9rieure commence \u00e0 perdre ses couleurs \u00e9clatantes,
